In the cellar
Fermentation on indigenous yeasts in 500-liter tonneaux.
At the end of maturation it goes through a clarification and
non-invasive filtration with the utmost respect for the integrity
of the wine. This is followed by a brief bottle aging of 4/6 months
Tasting
A wine with a greenish yellow color with straw-colored highlights.
Intense and enveloping nose with a delicate aromatic note,
on which are evident hints of sage, lemon grass, herbs
wild herbs, followed by fruity notes of citrus, pears, apples,
floral notes of acacia and broom with a very slightly spicy finish
and mineral. The palate shows good freshness and as much
sapidity, harmoniously alternating and in great balance.
To be served at 10/12° C to maintain intact its olfactory spectrum
and an ideal exaltation of the aromas.
Pairings
A white wine from Canavese with a greenish yellow color with straw reflections. The nose is intense and enveloping with a delicate aromatic note, on which hints of sage, lemon grass, wild herbs are evident, followed by fruity notes of citrus, pears, apples, floral notes of acacia and broom with a slightly spicy and mineral finish. The palate shows good freshness and just as much flavor, harmoniously alternating and in great balance. A wine of moderate structure and good persistence. Acini Perduti white wine should be served at a temperature of 10/12° C to keep its olfactory spectrum intact and an ideal exaltation of aromas.
